This study assesses the impact of heavy metal contamination on the proximate composition of Moringa oleifera grown in a quarry site in Kaltungo, Gombe State, Nigeria. Heavy metals were analyzed using Atomic Absorption Spectroscopy (AAS), revealing concentrations of Cadmium (Cd) ranging from 0.0153 to 0.0443 mg/kg, Chromium (Cr) from 0.268 to 1.47 mg/kg, Manganese (Mn) from 0.923 to 6.479 mg/kg, Lead (Pb) from 0.071 to 0.66 mg/kg, Copper (Cu) from 0.173 to 0.358 mg/kg, Zinc (Zn) from 0.391 to 0.785 mg/kg, and Iron (Fe) from 0.432 to 17.67 mg/kg, with several values exceeding WHO/FAO permissible limits. The proximate composition analysis showed Crude Protein (CP) levels between 2,030.00 and 10,298.75 mg/kg, Ash content from 947.41 to 3,032.67 mg/kg, Crude Fiber (CF) from 2,158.37 to 7,856.46 mg/kg, and Moisture content varying from 7,548.63 to 22,694.00 mg/kg. The effects of heavy metals indicated that while Chromium positively influenced CP (Estimate: 806.632, p-value: 0.0421), Manganese negatively affected it (Estimate: -294.261, p-value: 0.0110). Other metals, including Lead, Cadmium, Copper, and Zinc, showed no significant impact on the nutritional profile. Risk assessment revealed Estimated Daily Intake (EDI) values for adults, with Cd at 1.53439E-10 mg/kg, Cr at 4.55952E-09 mg/kg, Mn at 1.73294E-08 mg/kg, Pb at 2.61905E-09 mg/kg, Cu at 1.4193E-09 mg/kg, Zn at 1.5503E-09 mg/kg, and Fe at 6.35317E-08 mg/kg. The Health Index (HI) ranged from 7.3009E-07 to 7.3009E-07, while Hazard Quotient (HQ) values varied from 1.53439E-07 to 6.54762E-08 across different metals. The Lifetime Cancer Risk (LCR) for heavy metals also indicated potential health risks, specifically for Lead and Cadmium. This research highlights the necessity for regular monitoring of heavy metal concentrations in food sources to mitigate health risks associated with consumption.
